Roasted Vegetable Feta Quinoa

This recipe is very easy and only took me about 15 minutes! This is great for vegetarians but you can definitely add chicken if needed. I have seen this recipe as a side or as the main dish, so you can decide! Quinoa is a great source of protein if you are a vegetarian and also a great option for those who are gluten free!

Prep Time: 5 minutes Cook Time: 10 minutes Yields: 2 servings

Ingredients:IMG_1160

  • 1 cup of quinoa
  • 1/4th of red pepper chopped
  • 1/4th of yellow pepper chopped
  • 1 oz feta
  • 10 slices of baby bella mushrooms
  • 1 tsp of extra virgin olive oil

Directions:

Preheat the oven to 350. While you are waiting for the oven to heat up, place 2 cups of water into a pot and set the burner on high to allow water to boil. Next, cut up the peppers and mushrooms. Place the cut up veggies on a baking pan and drizzle the olive oil over the vegetables. Place the vegetables into the oven and allow to roast for 10 minutes. Once the water is boiling, add the quinoa. The quinoa should cook for about 6-8 minutes. Once the vegetables are done roasting, and the quinoa is done cooking.. add the vegetables to the quinoa and top it off with some feta!
